Spelt is an ancient grain type rediscovered and appreciated now for its nutritional values. It has a tough husk that naturally protects the kernel from pollution and insects, and helps retain nutrients and maintain freshness. 

Unlike modern wheat, which has been intensively cross-bred to increase yields, spelt has retained many of its original traits and remains nutritious and full of flavour.
