Favoured by the Irish, dulse is a craicing, vibrant seaweed that is famously fried as a vegan bacon alternative. If that’s not high praise, we’re not sure what is. Because it’s dried, it’s lovely to snack on raw, and can be added to curries and salads to bring a taste of the sea to your cooking. As with all seaweed, dulce is rich in fibre as well as protein, calcium zinc, and more vitamins than you can shake a stick of rock at.

1. Snack on raw straight from the pack.
2. Soak in a little water then add to salads.
3. Add a little to curries and sauces during cooking.
