The Boutique Bake Carrot Cake Mix makes 1 x 2lb Carrot Cake loaf, 1 traybake or 12 cupcakes! Includes a Vanilla Icing Mix to drizzle over the cake once baked!

Carrot Cake Mix 310g Wheat Flour (contains Flour, Mono Calcium Phosphate, Sodium Bicarbonate), Brown Sugar, Cinnamon, Mixed Spice, Bicarbonate of Soda (contains Acid Calcium Phosphate, Sodium Bicarbonate), Icing 100g (24%): Icing Sugar, Madagascan Vanilla Powder

1. Preheat your oven to 180°C / 160° fan/ gas mark 4.
2. Mix cake mix with 2 eggs, 125 ml of sunflower oil, 200g of grated carrots (approx. 2/3 carrots) and mix thoroughly.
3. Spoon mixture into a well greased/lined 2lb loaf tin or if making traybake, use a baking dish approx. 11'' x 7'' (28cm x 18cm).
4. Bake for 45-50 mins. If making loaf or 25-30 mins for traybake until a skewer inserted in the centre of the cake comes out squeaky clean, leave to cool in tin.
5. Combine icing pack provided with 2 dessert of water until smooth or follow our Top Tip below to make a cream cheese frosting and spread over the top of your cake.
